White Bean and Spinach Dip


This dip is quick, tasty and a great go to for last minute guests. If you have some dip leftover it is also a nice spread on a sandwich or wrap.

Ingredients: 
1 Can of Organic Canellini Beans (White Beans) drained and rinsed
1/2 Cup Extra Virgin Olive Oil
2 Tablespoons of Fresh Squuezed Lemon Juice 
1 Cup of Organic Fresh Spinach Leaves 
1/2 Clove of Garlic 
Salt and Pepper to Taste 

Directions:
Place Canellini Beans, Garlic and Lemon Juice in a food processor. Run until smooth. Next add Spinach leaves and run again. Slowly add the Olive Oil to the bean and spinach mixture scraping down the sides as needed. Add Salt and Pepper to taste. Serve in a bowl alongside your favorite vegetables, GF crackers or even some GF Matzo.
